Chocolate Muffins

-Chocolate Muffins
What you need:
175/6oz 3/4 cup butter, softened
150ml 1/4 pint 2/3 cups of milk
5ml/1 tsp vanilla extract
115g/4oz plain (semisweet)
choclate broken into small pieces
15ml/1 tbsp water
275g/10oz/2 1/2 cups plain (all purpose) flour
5ml/1 tsp baking powder
2.5ml 1/2 tsp baking soda
pinch of salt
300/11oz/ 1 1/2 cups caster (superfine) sugar
3 eggs.

For the icing!!!
40g/ 1 1/2oz/ 3tbsp
115g/4oz/ 1 cup icing (confectioners') suger
2.5ml/ 1/2 tsp vamilla extract.
15-30ml/ 1-2 tbsp milk

1.Preheat the oven to 180c. Arrarge 24 paper cases in a small muffin tin/pan.

In a bowl, beat the butter until light and fluffy. Add the milk and vanilla extract.

Melt the chocolate with the water in a heatproof bowl. Set over a pan of simmering water. Remove from the heat. Add the chocolate mixture to the butter mixture.
4.
Sift the flour, baking powder, baking soda, salt amd sugar over the batter and stir well to combine. Add the eggs, one at a time, and beat well after each addition. Divide the mixture evenly among the paper cases.
5.
Bake for 20-25 minutes or until a skewer inserted into the centre of a cake comes out clean. Cool in the tins for 10 minutes. then turn out to cool completely on a wire rack.
6.
To make icing, in a bowl beat the butter and icing sugar together with the vanilla extract. Beat in just enough milk to make a creamy mixture.
7.
Spread the top of each cake with each with icing.
